4 INGREDIENT CREAMY CAULIFLOWER CURRY
Ingredients
- Whole head of medium cauliflower
- 1 can white beans (or chickpeas)
- 1 can coconut cream
- 1-2 Tablespoons Red Thai Curry paste or similar (your preference)
- (Can add any other veg of choice as well)
Method
Chop heads into florets and put into a fry pan with white beans, coconut cream and curry paste of choice on medium heat.
Stir through and simmer for approximately 15mins until cauliflower is tender and sauce thickens a bit.
Turn off heat and add chopped greens over the top – leave a few minutes to wilt then stir through before serving.
